Boozy Creami pints: how much alcohol a pint can take

For a 16 oz pint, 3 tablespoons of a 40% spirit gives about 3.5% ABV and still spins like real ice cream. 4 tablespoons gets close to the 4.9% the luxury 21+ shops sell, but it freezes softer. Past about 5%, a home freezer can't set it.

Why alcohol is tricky

Alcohol doesn't freeze in a home freezer, so every spoonful lowers the freezing point of the whole pint. Luxury 21+ ice cream makers balance that with a super-premium base, around 16% milkfat: lots of cream, some egg yolk, and less water to turn into ice. Our 21+ recipes use 1 cup of heavy cream to ½ cup of whole milk for the same reason.

For a 24 oz Deluxe pint, multiply by 1.5.

How to add it

  1. Make and fully chill the base first. Custards need at least 4 hours.
  2. Stir the alcohol into the cold base. Heating it cooks the alcohol off.
  3. Freeze flat for 24 hours. Expect a slightly softer block.
  4. Spin on Ice Cream, Frozen Custard or Sorbet. Too soft? Back in the freezer 1–2 hours, then Re-spin.

Make it like the luxury shops

Boutique 21+ shops like Aubi & Ramsa don't share their recipes, but the style is easy to copy at home: a high-fat custard base, a good spirit you'd sip on its own, and flavors built around the drink: chocolate with Scotch, coffee with vodka, mascarpone with rum, passion fruit with tequila. Our versions below are our own recipes, not theirs.

Keep it safe

The alcohol isn't cooked off. Label adult pints clearly, keep them away from kids, and count them as a drink. Selling alcohol ice cream needs a license in most places.

Questions

Why won't my boozy ice cream freeze?

Too much alcohol or too little fat and sugar. Keep a 40% spirit to 3–4 tbsp per pint and use a cream-heavy base.

Can I make it stronger by adding the alcohol after spinning?

A splash poured over the top is fine. Mixed in after spinning, it melts the ice cream quickly.
