Creami crumbly or powdery? Here's the fix

Press Re-spin first. If it's still powdery, make a small hole, add 1 tablespoon of milk (or the liquid in your base), and Re-spin again. Crumbly just means the pint is very cold and low in fat or sugar, which protein and light bases always are.

Why it happens

The Creami shaves a solid frozen block. Full-fat, full-sugar bases freeze softer, so the first spin is creamy. Protein, light and fruit-only bases freeze harder, so the blade turns them into snow first. That's normal, not a broken machine.

The fix, step by step

  1. Press Re-spin. Most pints are smooth after one.
  2. Still powdery? Make a 1-inch hole, add 1 tbsp milk, Re-spin.
  3. Repeat once more if needed. Stop at 3 tbsp total or it turns into a milkshake.
  4. Rushed? Let the pint sit on the counter for 5โ€“10 minutes before the first spin.

Next time

  • Add 1 tbsp sugar-free instant pudding mix or โ…› tsp xanthan gum to the base. Both hold water so the pint spins creamy.
  • Use a little fat: 1 tbsp cream cheese, a splash of cream, or 2 tbsp coconut cream.
  • Swap erythritol for allulose or a little real sugar, which keep pints softer.

Questions

Can I re-spin more than once?

Yes. Two or three re-spins is fine. If it is still powdery after that, it needs liquid, not more spinning.

Does crumbly mean my freezer is too cold?

Usually not. It's the recipe. Very cold freezers make it worse, so a 5โ€“10 minute rest on the counter helps.
